Simply Pancakes

The simplest pancake recipe you will ever make is one from Jamie Oliver. I make, and have made pancakes using his recipe, over and over again, and it doesn’t have to be Shrove Tuesday (Pancake Tuesday) to make them.  It is literally a “no brainer” recipe, i.e. one cup, one cup, and one egg, pinch of salt, simple as that.  As long as you use the same cup to measure out your ingredients, that’s the key. You can add your own flavours, it’s up to you, but Mr. Oliver’s recipe has never failed me.

We make these when Hubs isn’t working over the weekend, or even when he is, we don’t mind 😉  I usually add either a teaspoon of vanilla extract or vanilla bean paste, to mine, along with some lemon or orange zest, and serve them with some heated (in a pan with some butter, naughty, but soohh very nice) canned or fresh fruit for a great breakfast/brunch.  However, there are others in my household who would rather enjoy them adorned with some rashers of smoked streaky bacon, and a drizzle of maple syrup…. each to their own 🙂  How do you like yours?

  1. Yum! I have to admit that I cheat and use the Odlums pancake mix. I just can’t get the basic recipe right, pretty tasteless! We love ours with a bit of butter, lemon juice and Maple Syrup. We splashed out and bought Maple syrup this year!
